MICHELIN Guide’s Point Of View

This restaurant pays tribute to Tuscany, thanks to its chef who has forged strong links with local producers while at the same time showcasing modern culinary techniques. The same emphasis can be seen on the wine list, which prioritises some lesser-known local labels which are full of character. In summer, soak up the country views from the outdoor tables. At lunchtime, enjoy the Picnic Virtuoso Gourmet (mini portions with all the usual flavours and elegance of Virtuoso cuisine).

The chef's commitment
Our project began in 2014 with sustainability as its key concept. The property is home to a certified organic farm, with farmyard animals, traditional fruit varieties, and olives – not forgetting our gourmet restaurant! Vines and a composting system are planned for the future. Ruins dating from the 18C have been carefully restored to house a geothermal heating system, using photovoltaic panels for our energy production.
