MICHELIN Guide’s Point Of View

The owner-chef gets unpolished buckwheat in from contracted farmers in Ibaraki prefecture. He mills the hand-harvested sundried grain himself in order for it to keep its flavour. The standard offerings are coarsely ground seiro soba, which emphasises the natural fragrance, and hot seiro soba with a beaten egg plus hot soba sauce poured on top. If you’re ordering shuko, we recommend the ‘Miso-marinated Grilled Shrimp’, which is first fried, then marinated in Saikyo miso and grilled.
