The owner-chef says the job of a sushi restaurant is to serve nigiri, so snacks are limited. He uses Edomae techniques on the fish such as kobujime and marinating in vinegar, and places particular emphasis on the vinegared rice. Old rice is cooked firm to create a sense of unity with the toppings as you chew. The focus is on tuna and several pieces are made in succession. Using Shiba shrimp in thick omelettes is a mark of faithfulness to traditional technique.
