This long-standing soba restaurant was begun by the owner-chef's father as a soba restaurant that offers delivery service. The current owner rebuilt it and places great store by aroma, so makes his finely cut noodles from almost pure buckwheat flour. We recommend the Nishumori to compare the characteristics of soba noodles from different regions. Some dishes use his experience in French cuisine, like salted pork cooked with soybeans, and chicken liver in oil.

Initiatives
We deliver buckwheat husks produced during the milling process to farmers for use as compost. We strive to maintain the soil cycle and thus conserve fields.
