MICHELIN Guide’s Point Of View

The signature dish here is ‘Jidori Tamba Kurodori Shoyu Ramen’. The kaeshi is made from a blend of several different soy sauces. It is then combined with dashi made from shellfish and from different kinds of chicken from various areas. The straight, flat noodles are made from whole wheat flour and have a pleasant texture that goes well with the soup. Creativity can be seen in such things as how the topping of chicken breast meat is made into confit to give it a soft texture.
