MICHELIN Guide’s Point Of View

The mysterious name is a portmanteau of ‘Den’, referring to creative Japanese cuisine, ‘Florilège’, referring to modern French, and ‘kushi’ (‘skewer’), referring to connecting two restaurants. Chefs Hasegawa and Kawate already share part of their name (kawa, meaning ‘river’), and together they fuse Japanese and French cuisine. The concept is skewered food and each item is a joint invention. The boudin noir cutlet skewer is topped with sweet and sour pickled apples.
