MICHELIN Guide’s Point Of View

The name of the restaurant comes from the town in Akita where the proprietress was born and raised. Made with chicken dashi, the ‘Kiritanpo Nabe’ is a speciality available from autumn to spring. From spring to summer, she uses lesser known wild vegetables like parasenecio and laportea from her hometown to make ohitashi and egg-bound soup. Enjoy local Akita cuisine, such as grilled Japanese sandfish and fermented ‘Izushi’ with vegetables.
