This hip shop, with its faux industrial décor, sources beef foreshank from Australia and New Zealand and braises it for seven hours in a consommé made from beef bones, mirepoix and herbs. The soup has depth and a sweet undertone. Noodles are handmade to have a springy texture like ramen - you can even specify your preferred noodle consistency. Try the Manchurian-Chinese beef noodle soup to sample different cuts all at once.
