MICHELIN Guide’s Point Of View

The rows of ducks in the show kitchen are quite a spectacle at this popular spot with locals looking for a casual meal. Ting Yuan’s signature dish is the three month-old Cherry Valley duck from Yilan County, grilled in a jujube wood-fired oven and basted and flambéed in Cointreau – this gives it mildly sweet, crisp and caramelized skin and juicy, tender flesh. The carcass can be made into an extra dish if you want. Roast ducks are by pre-orders only.
