MICHELIN Guide’s Point Of View

Mamorana is a tiny village just outside the small town of Pola de Lena which became famous a century ago thanks to the discovery of a priceless Roman mosaic. To make more space, the restaurant has moved to a building full of character offering impressive panoramic views. Here, chef Javier Álvarez Farpón’s focus is on several menus that showcase the typical dishes of the area such as creamy ham croquettes, the chicken-based “arroz con pitu de caleya”, “arroz con leche requemado” (a type of crème brûlée), and, in season, “pote de nabos y su compango” (a turnip and meat stew), alongside a concise à la carte featuring all of his house specialities.
