MICHELIN Guide’s Point Of View

The owner-chef honed his sensibilities at a kappo restaurant in Namba. The tsukuri is served not as an assortment, but individually flavoured with spices and seasoning. The bamboo shoots, picked in Kaizuka City that morning, are something the regulars look forward to. Also appealing are the seasonal seafood and kuroge wagyu rump, or deer and wild boar meat in the winter, grilled as is over bincho charcoal from Tosa or straw.
