The chef's commitment
The vast majority of the produce is bought from small producers less than 30km away. We have a vegetable garden, harvest fruit from the orchard, pick wild herbs and turn our waste into compost. We constantly manage our energy consumption... and above all we work in a reasoned, responsible and involved way. This logical and natural approach is simply part of my job, my idea of being a man who cares about people and the things around him.
