With its location on the Place du Fronton in Ainhoa, facing the village’s pelota wall, you won’t find a more Basque setting! This attractive and traditional family property has retained its tiled flooring, wood beams, gleaming copper pots and pans, and vintage tableware. Assisted by his brother Stéphane in the dining room, chef Xavier Isabal is at the helm, now supported by his nephews Martin in the kitchen and Louis at the pastry station. A hint of modernity is evident on the enticing menu here, with Isabal sourcing his ingredients exclusively from local Basque producers, which he then supplements with his own fruit and vegetables. The local terroir is deliciously showcased via dishes such as Landes asparagus, sauce mousseline with pepper and crispy egg yolk; Koskera-style line-caught hake; and roasted rack of milk-fed lamb with confit shoulder.
