It's good news for those inquisitive diners always asking about recipes—it's all right in front of you at this LES hot spot. A well-orchestrated adaptation of classic Japanese shabu shabu, the cooks here literally “swish swish” a host of raw ingredients in pots of boiling water, before finishing them in sauces like sweet soy; pungent ponzu; and nutty miso.From melting slices of marbled Wagyu to slivers of pork belly wrapped around lettuce, everything gets seasoned, cooked, plated and garnished right at the ten-seat counter. At times, Spanish and Italian influences might make their way into this tasting menu, but the results are largely convincing. Diners should prepare to stay a while, as both the food and the hospitality deserve to be fully enjoyed.
