MICHELIN Guide’s Point Of View

Known as the “Justin Bieber of Food,” Flynn McGarry has caused much ado on the local food scene. By seventh grade, he was committed to cooking, eventually apprenticing at well-known kitchens until he launched the pop-up Eureka in LA—which eventually moved to NY. With Gem, now he has his first brick-and-mortar spot, at the ripe old age of nineteen. Come nighttime, this open kitchen boldly equipped with a small convection oven lights up with a merry crew cranking out ten or so courses over two seatings. The chef's unabashedly ambitious techniques with seasonal ingredients result in a remarkably vivid and mature culinary vision. Envision smoked cod with shaved green apple, or braised pork in a lettuce wrap with fish sauce and you'll start to get the picture.
