MICHELIN Guide’s Point Of View
Uosho is the name of the fish shop that the owner-chef’s parents ran. He has known fish first-hand since an early age and chose the path of a sushi chef. Uzaku, round eggplant with dengaku miso and matsutake dobinmushi are seasonal delights. The vinegared rice for the nigiri is given a somewhat sweet flavour in accordance with local preference. The toppings feature elaborate preparations, such as anago steamed in white soy sauce and sabazushi in mustard greens.
