The contemporary interiors, enlivened by delicate pastel tones, help create an atmosphere that is both intimate and refreshingly informal in spirit. Here, cookery is a convivial gesture: the chef does not remain hidden behind the stoves, but often comes out into the dining room to speak with passion about his dishes, born of contemporary techniques and personal sensitivity. His signature lies in well-calibrated sapidity, achieved through targeted fermentations, measured touches of acidity and a selection of quality ingredients that converse with Oriental influences while never losing their connection to Italian roots. The emblematic example is his tuna osso buco with yuzu potato cream, tuna jus and sun-dried tomato garum: a successful crossover in which tradition and Asian influences interweave with natural ease.
