On a hillside just two minutes from the centre of Spa, the scene is set in a 19C villa, where the occasional chicken pecks about on the terrace. Upstairs are a few comfortable guestrooms, while downstairs is a friendly eatery bubbling with youthful personality. Nicolas Bodart treats us to a masterclass of purebred generosity as he allows the ingredient to shout its name. Whether it be sweetbread, pigeon or seabass, everything is immaculately sourced. The chef has a knack for enhancing his produce, illustrated by the crispy, yet melt-in-the-mouth Sisteron lamb. Powerful sauces and subtle side dishes complete this culinary portrait. The food is spot on, oozing with flavour and at deliciously eater-friendly prices, all of which by a dedicated chef.
