MICHELIN Guide’s Point Of View

The owner-chef likes to practice the tea ceremony, flower arrangement and calligraphy. The broth for the nimono soup gets its savouriness from kombu and katsuo alone. Putting to work what he learnt at a sushi restaurant, he salts the tsukuri, and the uni is put on vinegared rice and rolled up in nori. Freshly cooked rice is served in the shape of the Japanese numeral character one and seasonal sweets and usucha are served according to tradition.
