MICHELIN Guide’s Point Of View

As the ‘Shutei’ (“sake restaurant”) in the name suggests, there’s a wide selection of local and seasonal sake. The owner-chef knows the characteristics of each and pairs dishes with chilled or warm sake. The star from autumn to spring is oden, featuring yam bulbils in autumn, yellowtail wrapped in kombu in winter, and Kyoto-grown bamboo shoots in spring. The light dashi, made from two-year-old natural Rishiri kombu and dried fish, draws out the flavours.
