The owner-chef studied noodle making in Kagawa and adds his own ideas. "Fresh-cut, fresh-cooked" is what it's all about, with the stretching and cutting of the dough taking place right before cooking. This kind of effort shows in the noodles' chewy elasticity and how smoothly they go down. The ‘Taiga-mori Udon’, which comes with shrimp tempura and chikuwa fish paste cake, is famous. There is a staunch local following for this udon that's neither Sanuki nor Kyoto.
