MICHELIN Guide’s Point Of View

The chef pursues a diversity of tastes and expresses the season with the main ingredients, giving them fragrant or sour accents. One example is the colourfully arranged speciality salad – more than 30 different vegetables from Kamigamo and Kameoka are used, and they’re prepared in various ways both hot and cold, including marinating them and sautéing them. The restaurant is named after his two beloved daughters.
