Adeline Grattard was given and continues to demonstrate a rare gift – a remarkable feel for the ingredients she uses in her cooking. In her restaurant on rue Saint-Honoré, this young chef chooses just two or three ingredients which she then focuses on to the full. Here, you won’t find showy demonstrations of her techniques or any form of ostentation, just subtle, rarely seen combinations which appear completely natural. Trained alongside Pascal Barbot (L’Astrance) and having spent several years working in Hong Kong, she brings together ingredients of extraordinary quality (mainly from France and Asia) – examples include her XO sauce, black rice vinegar, and shellfish jus. All these can be superbly paired with a rare selection of Asian teas (yam’tcha in Chinese translates as “to drink tea”). There’s no set or à la carte menu – just the element of surprise and inspiration that comes from the day’s market-sourced ingredients.
