MICHELIN Guide’s Point Of View

The menu was designed by chef Christophe Raoux, a Meilleur Ouvrier de France, who has obviously worked in some fine establishments. The young chef Mathis Jonquet executes it with flair and elevates charcuterie to a real art form: e.g. the splendid poultry pâté en croûte and foie gras, or the Aveyron pork with new vegetables and a pork jus! Sober and elegant decoration, perfect service.
