MICHELIN Guide’s Point Of View

The menu was designed by chef Christophe Raoux, a Meilleur Ouvrier de France, who has obviously done stints in some fine establishments. The young chef Matis Jonquet executes it with flair and treats charcuterie as an art form: for instance, the splendid pâté in poultry crust and foie gras, or the Aveyron pork with new vegetables and pork jus! Sober and elegant decoration, perfect service.
