"In my restaurant in St Pauli, sustainability is very important to me, so I use fruit and vegetables from four organic traders, game from the Lüneburger Heide, beef, pork and poultry from the Hamburg hinterland. I make sure there is little packaging and waste, and I also clean with organic products."
