MICHELIN Green Star
A tiny gastronomic jewel which is usually fully booked, although you can turn up early and join the queue in the hope of a table becoming available. In this contemporary eatery with an industrial vibe (it was originally a siphon factory) in the Chacarita district, everything is directed towards the centre of the dining room, with its open kitchen and a grill surrounded by a highly original counter where you can eat while watching the chefs at work. The cuisine here, complemented by delicious Argentinian charcuterie and cheeses, is designed for sharing, with some dishes inspired by Guaraní recipes (“chipa guazú” with smoked surubí), alongside pastas, rice dishes, organic vegetables from the restaurant’s own farm, and fish from Argentina’s rivers (patí, surubí etc) and coastline, as well as superb cuts of meat (three cooking options are available (55°C - medium rare, 49°C – rare, and 42°C - bleu). It also runs two neighbouring businesses - Anchoíta Cava (perfect for a glass of wine with tapas) and the Panadería de Anchoíta bakery.
"In addition to the 18 hectares of land under production and the farms where we raise pigs, chickens and geese, we also have agreements in place with sustainable suppliers. Under the supervision of anthropologists, we also try to operate within a more respectful supply chain."
