For those who prefer their sushi with a splash of style, this may not be their cup of (green) tea. But, for true aficionados seeking substance in the form of top-quality fish, this is heaven, as the kitchen delivers an all-out omakase that doesn’t pull any punches. It’s a no-holds barred and seemingly no-expense spared wild romp through Japanese cuisine as envisioned by Chef Kimiyasu Enya.

Expect things to begin with a bang—in the form of charred toro belly topped with tuna tartare—and take off from there. Courses oscillate between simple and dazzling, like bowls of dashi and still-bouncy giant clam with nori to such dramatic presentations as a smoke-filled cloche revealing tender cubes of duck breast. Caviar makes for a lovely, if lavish, supplement.
