Kintsugi is a reference to the Japanese art of repairing broken ceramics with golden lacquer. The American-Japanese sushi master considers this art a beautiful thing that embraces imperfections. He serves Japanese Kaiseki cuisine using modern techniques that respect its ancient roots. His signature dish is a nod to the Kit Kat bar: the alluring Kin Kat is a crispy wafer that sandwiches creamy foie gras and cognac in a dark chocolate shell.
