“True service is anticipatory, rather than reactive,” says Christopher Tegreeny, the winner of the 2026 MICHELIN Guide Florida Service Award, sponsored by Capital One. “It is built on detailed knowledge of our guests’ preferences, occasions and expectations, allowing us to tailor each experience with intention.”
Tegreeny is quick to point out that executing a flawless experience requires the commitment and dedication of the entire team. “Everyone, from culinary, bar and sommelier to hostess is aligned in both knowledge and purpose, ensuring clarity of communication and confidence in execution.”
Similar to any performance where the set and lighting may influence the audience, restaurant service is impacted by often invisible actions. “Equally important is the harmony of the room: pacing, lighting, energy and tone, all carefully managed to complement the cuisine,” he says. “The chef’s presence in the dining room reinforces this connection, allowing the experience to feel both personal and precise.”
We recently connected with him to learn more about how he choreographs an exceptional service experience.
What does good service mean to you?
For us, exceptional service is defined by consistency, intuition and precision at every touchpoint. It begins well before the guest arrives with a thoughtful understanding of each reservation and continues through to a seamless, memorable farewell.Tell us about Salt. What does it offer guests?
Salt offers a distinctive combination of place, cuisine and service. The restaurant’s oceanfront setting provides a natural sense of drama and tranquility, which is complemented by Chef Okan Kizilbayir’s cuisine — refined, seafood-driven and rooted in classical technique, shaped by his tenure with Chef Eric Ripert. Signature elements such as tableside sauces and composed presentations add both precision and theater to the experience.Equally important is the service philosophy. Our team is trained in The Ritz-Carlton tradition, placing equal emphasis on technical excellence and genuine connection. The Chef’s presence in the dining room further strengthens this relationship, fostering a sense of familiarity and trust with our guests. The result is an experience that feels both elevated and deeply personal—where the environment, cuisine and hospitality are in complete alignment.
How do you prepare for an evening?
Preparation is foundational to consistency. Each evening begins with the team carefully setting the dining room to reflect both elegance and comfort, ensuring the environment is aligned with the experience we intend to deliver. We then conduct a detailed lineup, reviewing every reservation, the occasions, dietary requirements, preferences and returning guest histories. From this, we build a clear service strategy for the evening, thoughtfully assigning tables and servers to create the most natural and comfortable experience for each guest.We place particular emphasis on what we call “golden nuggets,” or meaningful insights that allow us to personalize the experience in subtle but impactful ways. These inform everything from menu customization to pacing and interaction style. This level of preparation ensures that each service feels composed, intentional and individualized, while maintaining the consistency expected at the highest level.
Take us through service. What does it look like?
An evening at Salt unfolds with a natural rhythm, composed yet fluid. Guests arrive at their own pace, some beginning in the lounge, others transitioning directly into the dining room or choosing a more relaxed bar experience. The setting balances refinement with warmth: ocean views, soft lighting, live music and an understated sense of occasion. Within this environment, the service has evolved with presentations, careful pacing of courses and a continuous dialogue between guest and team and periodic table touches by Chef Okan.Throughout the night, there is a dynamic interplay of energy moments of celebration alongside quieter, more intimate experiences. No two evenings are identical; each reflects the individual stories of the guests we are hosting. What remains constant is our focus on precision and presence, ensuring that every guest feels deeply attended to without interruption to their experience.
What do you look for when hiring staff members?
While technical experience is valuable, we prioritize character and mindset above all else. We look for individuals with a genuine sense of care, emotional intelligence and the ability to read and adapt to guests with ease. Hospitality at this level requires presence, empathy and curiosity. The ability to engage naturally, communicate clearly and execute with precision is essential. We seek team members who are both intellectually engaged and detail-oriented, with the discipline to maintain standards and the personality to bring warmth to the experience. Skills can be refined; instinct and sincerity cannot. Those qualities are what ultimately define exceptional service.What do you enjoy about your role, and what advice would you give to someone considering a career in hospitality?
What I value most is the ability to create meaningful, lasting impressions. Hospitality, at its best, becomes part of a guest’s personal story, whether marking a milestone or transforming an ordinary evening into something memorable.For those considering this career, I would emphasize the importance of both discipline and empathy. This profession demands precision, resilience and consistency, but above all, it requires a genuine desire to care for others. If you approach it with passion, curiosity and respect for both craft and people, it becomes far more than a profession — it becomes a lifelong pursuit of excellence.
