Sustainability is the name of the game at the luxurious Sapphire Hotel in the heart of Antwerp and the glitzy, glammed-up WILDn is perfectly in tune with this philosophy. In an elegantly revamped Belle Époque interior, Bart De Pooter adds a subtle nuance to plant-focused dishes. Veggies and seasonings are crafted intelligently and deftly and the non-alcoholic pairings are truly noteworthy. For example, butternut, guava juice and green peas are combined in a fascinating and complex recipe.

The connection with nature is peculiar to me. The vegetables for the restaurant come from our own ecosystem pursuing ethical and sustainable agriculture, spread over 12 hectares of land between the fields of the Rupel, Nete and Scheldt rivers. At WILDn, we are 100% plant based. How nice would it be if what we eat contributes something to the planet?
