Owner-chef Tomokazu Yurikusa learned the appeal of duck and foie gras from the French-born chef who mentored him. The name of the restaurant means ‘duckling’, which is also the speciality of the house. Yurikusa’s use of Osaka duck is a tribute to the city that is his birthplace. His use of fruit and vinegar to add sourness while setting great store by classic culinary methods imparts a wonderful sense of lightness.
