In a pedestrian lane opposite Saint Martin’s Church, in the heart of Pau, this bistro and its sunny patio are invariably packed to the seams. The concept is disarmingly simple: a warm welcome from the owner (whose parents supply most of the veggies) and a tasty menu curated by her husband chef, who sources his premium produce locally. With the exception of the house specialty, pig’s trotters and gribiche sauce, the concise slate menu changes regularly (poached free range egg, roasted guinea fowl, cheese and homemade desserts to die for).
