The appointment of chef Tam led to a rejuvenation of Wing Lei Palace, and the revamped menu features new signatures and seasonal dishes. Typhoon shelter-style fried pigeon, which uses a 28-day-old bird, impresses with spot-on seasoning and tender flesh. Bamboo fungus stuffed with asparagus in a vegan stock tastes, looks and smells divine. Tables are spaced out nicely and floor-to-ceiling windows bring in fantastic views of the Performance Lake show.
