Soban

The vibe at this tiny haunt isn’t much to speak of—it doesn’t even have a liquor license—but if you take note of the many framed reviews and accolades that serve as its sole décor, you’ll realize you’re in for a treat. Even amid tough Koreatown competition, Soban is known for its banchan. Featuring everything from traditional kimchi to sautéed eggplant, the selection is ever-changing and quite impressive. Most diners opt for the house signatures, including ganjang gejang (raw crab pickled with soy, garlic and ginger) or galbi jjim, a sweet and tender braised short rib stew. But the menu holds innumerable other delights, like nakji bokkeum, soft and chewy baby octopus stir-fried with chili, garlic, leeks and served with sticky brown rice.
