MICHELIN Guide’s Point Of View

The owner-chef created one-of-a-kind 'fermented sushi' after much studying on his own. This is artisanship made possible by his thoroughgoing knowledge of fish. he uses white-fleshed and blueback fish, salting them and fermenting them for a long period of time. This brings out the flavour and softens the flesh, creating contrast with the firm vinegared rice as he demonstrates his marked individuality with original interpretations.
