MICHELIN Guide’s Point Of View

During his apprenticeship, the owner-chef focused his attention above all on the internal organs of chickens, which is why he is so intent on freshness in the local, free-range chickens he handles. Keen to regale patrons with as many different flavours as possible, he prepares an incredible variety of cuts, including the rarest. Great effort is expended on surprising the guest’s palate at every turn, with the dressing alternating between salt and sauce.
