MICHELIN Guide’s Point Of View

The name means ‘ingenuity’ as Souikufu is home to uniquely inspired creations offered in set menus that you won’t find anywhere else. Potatoes dressed in anchovy butter and fried rice paired with curry roux are staple offerings. The adoption of kaiseki-ryori-style presentation is an engaging touch, with offerings such as ‘O-wangushi’, fish skewers served in a small bowl; burdock wrapped in beef; and ‘Age-hassun’, a platter of stewed walleye roe.
