MICHELIN Guide’s Point Of View

When using spices, the most important factors are aroma and temperature. For this reason, Hashimotoya grinds the spices only when the customer has ordered – and serves the curry in a piping-hot earthenware pot with a lid. The menu focuses on chicken curry; the other ingredients are stewed in chicken soup to harmonise them with the chicken and curry. The rice is cooked with onion and spices for a perfect marriage with the curry.
