MICHELIN Guide’s Point Of View

Having your fill of Japanese cuisine stripped to its essentials, and lovingly served on antique and contemporary dishware, is the real pleasure of Ogata. Owner-chef Toshiro Ogata fills each plate with nature’s bounty. “Holding back on seasonings richly draws out the innate flavours of the ingredients”, he explains. He pairs bamboo shoots with shirako in spring and, in winter serves ebi-imo boiled in water only. His daring yet delicate cuisine is richly imbued with seasonal aromas.
