MICHELIN Guide’s Point Of View

At the helm of Poetry‧Wine, Chef Duan is also the man behind this menu and kitchen team. The cooking is basically Cantonese, but with regional accents from all over China. In his signature braised fish head dish, fish from Taiping Lake in Anhui is cooked in a secret sauce that packs a flavourful punch. Another must-try item is the beef bone marrow and black truffle rice in claypot – intoxicatingly aromatic, and big enough for a few to share.
