Chef Ruyman González spearheads cuisine that celebrates the culinary heritage of the Canary Islands through carefully prepared dishes, contemporary nuances and a deep respect for local ingredients, represented by produce from the islands (gofio, goat, red prickly pear) and the rich Atlantic larder (wreckfish, bluefin tuna, sea bream).
