                        Head for the Flesborg Fjord, and at the water’s edge you’ll find this early-20th-century villa boasting a cosy bar, parquet floors and light wood furnishings. After almost a decade working at Henne Kirkeby Kro, British-born Paul Proffitt set upon his own in this most idyllic spot on the opposite side of south Jutland; book a space in the glass-cubed ‘Doris’ to watch him up close.
