The bounty of the sea is celebrated here. Oysters, sea urchin, octopus, salmon and lobster from the nearby sea are the foundation for most of the salads and raw dishes. The chef's inspiration skitters around the globe, with dishes like Peruvian ceviche and yellowtail seasoned with ponzu sauce and yuzu pepper dressing flip-flopping from the Mediterranean and Japan to Latin America. To finish, a simple dish of berries and mascarpone cream is light and airy.
