Owner-chef Hiroki Hayakawa creates Italian cuisine original to his establishment. Each day he comes up with his menu based on the ingredients he selects from the market. The rice for the risotto is sourced from a Kisshoin farmer. Using sticky Japanese rice enables him to ease up on fats and oils, imparting a lightness to his preparations. Prizing both the ingredients of Kyoto and the seasons, his fare is free-ranging, impossible to pigeonhole and entirely his own.
