The menu changes monthly and new dishes are devised each year to keep things fresh. The appetisers have layers of flavour from the variety of ingredients used. The textbook is dispensed with, so rather than serving hamo with the usual ume flesh and tsukuri with soy sauce, they are paired with sudachi nikogori, or with sauce made from vegetables. This approach, where the desserts are a blend of Western and Japanese, makes for food chock-a-block with creativity.
