Not only is this a noodle shop – nestled in a picturesque park – but it’s also a factory that makes noodles for various restaurants in Guangzhou and Hong Kong. These famous strands made with duck eggs are dried on bamboo skimmers outside the shop. Dried plaice is toasted on charcoal before being added to the flavourful broth along with pork backbones and dried shrimp.
