This restaurant takes its name from a lowland region on the Central Mexican plateau that encompasses several of the country’s states, and is the international figurehead for a hotel group that has been in business for over half a century and has numerous ventures in the country. The up-to-date Mexican à la carte includes dishes such as “panuchos yucatecos” (stuffed corn tortillas), prawn “molcajete”, “huarache”, and sea bream with a green pepián salsa. The menu is well balanced and adapted to Spanish palates and includes perfect dishes that are always overseen by “las mayoras” – legendary Mexican women who ensure that the country’s traditional flavours are fully respected.
