"We work directly with local eco-conscious farmers, fisherman and ranchers; so that the majority of all our produce is from local farms/ farmers markets that we have relationships with. We use local milk and cream for our dairy and our in-house dairy program results in our own butter, creme fraiche, fresh cheese, yoghurt and Brunost. Everything from the aprons that we wear to the plates and woodwork we use comes from local ceramicists and artists."
