Chicken is flash-grilled over bincho charcoal. The neck meat made into a spiral shape, and the meatloaf hand-kneaded only after the order has been placed are examples of the earnest take on cooking here. The chicken liver with ginger, long-cooked at low heat, is popular. The "Mao Zedong" chicken wingtips, seasoned with red pepper and Sichuan pepper, have a Chinese flavour, the dish inspired by the regional cuisine of Mao's home province, Hunan.
