Edwin Soumang’s restaurant is situated in an impressive industrial building comprising a loft-style interior and outdoor terrace. Front of house, the charming Canadian hostess will guide you through the chef’s creative dishes, which include surprising garnishes from the restaurants’ 1 000m2 urban garden.

"Waste not, want not: we believe in putting quality over quantity. Our vision of sustainability and responsibility continues to evolve. What is produced in the kitchen garden should be on the plate. What does not come from the garden comes from local farmers and suppliers working from the same vision. In ONE's Great Garden menu, we work exclusively with these products, without meat and fish. We also choose natural materials in the interior."
